Ingredients
- 1 cup fresh blueberries
- ¾ cup cake flour
- ½ cup unsweetened apple purée
- 2 T Suganon Xylitol
- Pinch of Himalayan rock salt
- 1 t baking powder
- 1 t cinnamon
- just under ¼ cup coconut/olive oil
- 1 egg
- ¼ cup milk of your choice
Method
- Preheat your oven to 180° Celsius.
- Mix all ingredients apart from the blueberries in a bowl then gently stir them in.
- Spray a muffin tin with non-stick spray then pour in the mixture.
- Bake for 25-30 minutes or until cooked through. Allow to cool before serving.
