Ingredients
- 1 ½ cup cake flour
- 1 t baking soda
- ½ t Himalayan rock salt
- ¾ t ground cinnamon
- ½ t ground cardamom
- ½ cup unsalted butter or chilled coconut oil
- 1 ¼ cup Suganon Xylitol
- 2 eggs
- 1 cup unsweetened apple purée
Method
- Heat oven to 180° Celsius.
- In a large bowl, whisk the flour, baking soda, salt and spices together.
- With a mixer, combine the butter or oil and Suganon Xylitol until light and fluffy then add in the eggs one at a time.
- Slowly add in the dry mixture, followed by the apple purée.
- Grease and flour a loaf tin, then pour in the mixture. Bake for 50-60 minutes until a toothpick in the centre comes out clean. Serve with dollops of apple purée.
